Bright Blueberry Lemon Dessert You Have to Make this June

The summer heat can often feel sticky and overstimulating, and all you want is an ice cream cone or an ice-cold soda to refresh you. We often overlook the warm baked desserts, but we don't have to when you use fresher ingredients like lemon and blueberries. Cool down this summer with a bright, fresh blueberry-lemon coffee cake that satisfies your cravings. The lemon is tangy, which balances with the sweet blueberries. The cake is fluffy and not too sweet, so you can enjoy it all day. We got inspired by TikTok Bree Lesch's recipe. It's a must-add to your summer baking rotation.

Blueberry Lemon Coffee Cake
Ingredients for Batter:
1 cup plain Greek Yogurt
1/4 cup Buttermilk
1 cup Granulated Sugar
1/2 cup Softened Butter
2 Eggs
2 tbsp. Vanilla Extract
Zest of 1 Lemon
1/4 cup Lemon Juice
2 1/2 cups All-Purpose Flour
2 tsp. Baking Powder
1 tsp. Baking Soda
1 1/2 cups Frozen Blueberries
Ingredients for Crumble:
1/2 cup Brown Sugar
1 cup Flour
5 tbsp. Softened Butter
2 tbsp. Melted Butter
Splash of Vanilla
Ingredients for Frosting (optional):
1 cup Powdered Sugar
1 tbsp. Lemon Juice
Splash of Vanilla
Step-by-step Instructions:
In a small bowl, combine your Greek yogurt with the buttermilk and set aside. In a larger bowl, cream the butter and granulated sugar for 3 minutes. Add your eggs, vanilla, lemon zest, and lemon juice, then mix until combined. In a separate bowl, combine the flour, baking powder, and baking soda. Slowly add your flour and yogurt mixture to your first bowl with the sugar and butter until everything is well combined. Lastly, gently mix in the blueberries. Transfer your mixture to a buttered baking dish. Preheat your oven to 350 degrees Fahrenheit while you make the crumble topping.
Make your crumble topping by combining brown sugar, flour, softened cubed butter and the lemon zest. Slowly combine with a fork, then add the melted butter. You can also use your fingers and press the butter into the flour and sugar until you get clumps. Keep mixing until you get a mixture that looks like wet sand with a few clumps. Spread the crumble over your batter and gently press it into the batter. Bake your cake for 45-55 minutes or until a toothpick comes out clean.
While your cake is baking, make your streusel frosting by combining the powdered sugar, lemon juice, and vanilla extract in a bowl. Once your cake has cooled down, drizzle your frosting over the top and enjoy with a warm cup of coffee.
